Pancit Bihon (Rice Noodle Stir-Fry)

Ingredients
- 200 g bihon (dried rice noodles)
- 3 tbsp cooking oil
- 2 cloves garlic, minced
- 1 onion, sliced
- 200 g chicken thigh, sliced thin
- 1 carrot, cut into matchsticks
- 100 g green beans, sliced
- 100 g cabbage, sliced
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 250 ml water
- salt and pepper
Method
- Soak the bihon noodles in warm water until just pliable, about 10 minutes. Drain and set aside.
- Heat oil in a large pan over medium heat. Add garlic and onion. Sauté until the onion turns soft and the garlic smells nutty.
- Add chicken pieces and cook, stirring, until the meat turns white on all sides.
- Add carrot and green beans. Stir and cook for 2 minutes, until vegetables brighten in color.
- Add water, soy sauce, and oyster sauce. Bring to a simmer.
- Toss in the soaked noodles and cabbage. Gently stir and turn with tongs until noodles have absorbed liquid and become tender, 5-7 minutes. Taste for salt and pepper.
- Once noodles are limp and coated with sauce, and the mixture looks dry but not clumpy, it's ready.
