Poha (Flattened Rice Breakfast)

Ingredients
- 250 g thick poha (flattened rice)
- 1 onion, sliced
- 1 potato, diced small
- 1 green chilli, chopped
- 2 tbsp peanuts
- 1/2 tsp mustard seeds
- 8 curry leaves
- 1/2 tsp turmeric
- 2 tbsp oil
- 1.5 tsp salt
- Juice of 1/2 lemon
- 2 tbsp chopped coriander
Method
- Rinse poha in a big sieve under running water till soft, not mushy. Set aside to drain.
- Heat oil in a pan. Add mustard seeds; when they pop, add curry leaves and peanuts. Fry till peanuts are golden.
- Add diced potato. Cook till nearly soft and edges turn golden.
- Stir in onion and green chilli. Cook till onions go translucent.
- Add turmeric and salt. Toss, then add drained poha.
- Mix gently on low for 2-3 min. Turn off heat, squeeze lemon juice, and garnish with coriander.
Don't over-soak poha. It should hold its shape, not turn clumpy.
