Greek Village Salad (Horiatiki)

Ingredients
- 3 ripe tomatoes
- 1 cucumber
- 1 green bell pepper
- 1/2 red onion
- 100 g feta cheese
- 16 kalamata olives
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1/2 tsp dried oregano
Method
- Slice the tomatoes into wedges, cucumber into thick half-moons, and the pepper into rings.
- Thinly slice the onion.
- Arrange all the vegetables in a big salad bowl. Scatter over the olives.
- Crumble the feta over the top in large pieces.
- Drizzle over the olive oil and vinegar. Sprinkle with oregano. Toss gently just before serving.
Feta on top, not mixed in, is typical. Mix right before you eat, or it gets mushy.
