Cabbage Thoran (Coconut Stir-Fry)

Ingredients
- 400 g cabbage
- 1/2 cup grated fresh coconut
- 2 green chillies
- 8 curry leaves
- 1/2 tsp mustard seeds
- 1/2 tsp urad dal
- 2 tbsp oil
- salt to taste
Method
- Shred cabbage finely. Slice chillies.
- Heat oil in a wide pan. Add mustard seeds. When they pop, add urad dal; fry till dal turns pale gold.
- Add curry leaves, sliced chillies, and cabbage. Stir over high heat until cabbage looks bright and begins softening.
- Add salt and cook uncovered, stirring often, till cabbage is just tender but still crisp.
- Stir in grated coconut and cook 1 min more. The thoran is ready when coconut smells nutty and cabbage is still green.
Thoran is quick. Don’t overcook or the cabbage turns soggy instead of crisp-tender.
