Cabbage Thoran (Coconut Stir-Fry)

  1. Shred cabbage finely. Slice chillies.
  2. Heat oil in a wide pan. Add mustard seeds. When they pop, add urad dal; fry till dal turns pale gold.
  3. Add curry leaves, sliced chillies, and cabbage. Stir over high heat until cabbage looks bright and begins softening.
  4. Add salt and cook uncovered, stirring often, till cabbage is just tender but still crisp.
  5. Stir in grated coconut and cook 1 min more. The thoran is ready when coconut smells nutty and cabbage is still green.

Thoran is quick. Don’t overcook or the cabbage turns soggy instead of crisp-tender.
