Nasi Goreng Rumah (Home-style Fried Rice)

Ingredients
- 400 g cooked rice (cold, from yesterday)
- 2 tbsp oil
- 3 cloves garlic
- 1 onion
- 2 tbsp soy sauce
- 1 carrot
- 100 g green beans
- 1 red chilli (optional)
- 1 tsp salt
- 1 tsp sugar
- 1 spring onion
Method
- Peel and chop the garlic and onion. Slice the carrot and green beans small, chop the spring onion, and, if using, thinly slice the chilli.
- Heat the oil in a large frying pan or wok over medium-high. Add garlic and onion. Stir until the onion is soft and smells sweet, about 2 min.
- Add the carrot, green beans, and half the spring onion. Stir and fry for 3 min, until veg is bright and slightly softened.
- Add the cold rice. Break up any big clumps with a spoon and mix thoroughly so every grain gets some oil.
- Pour in the soy sauce, salt, and sugar. Stir and fry until the rice is hot and starting to colour evenly, 5-7 min. Taste and adjust salt if needed.
- Turn off the heat. Scatter the last of the spring onion and the chilli over the top. Serve hot.
The trick is using cold, old rice so the grains stay separate and don’t get mushy.
