Vinagrete (Brazilian Tomato & Onion Salad)

Ingredients
- 2 medium tomatoes
- 1 small onion
- 1/2 green bell pepper
- 2 tbsp fresh parsley
- 4 tbsp olive oil
- 2 tbsp red wine vinegar
- 1/2 tsp salt
- black pepper, to taste
Method
- Chop tomatoes, onion, and bell pepper into small, even cubes so every spoonful mixes easily.
- Chop the parsley finely.
- Combine tomatoes, onion, bell pepper, and parsley in a bowl.
- Add olive oil, vinegar, salt, and a few grinds of black pepper.
- Stir well. Let the salad stand 10 min so the flavors meld. You’ll see a bit of juice in the bottom of the bowl.
- Taste and add more salt or vinegar if needed.
The main mistake is not chopping the vegetables finely; large pieces won’t soak up the dressing and taste flat.
